Fluffy Arla Skyr Pancakes with Strawberries

Pancakes:
200g flour
75g sugar
Pinch of salt
1 tsp baking powder
200mls whole milk
250g Arla Skyr Strawberry
5 medium eggs
25g butter

Topping:
Almonds
200g strawberries
400g Arla Skyr strawberry

Instructions:

  1. Stir the flour, sugar, and baking powder together in a bowl. Whisk the strawberry skyr and milk together in a separate bowl before adding it to the mixture. Then whisk everything until it’s all blended together.
  2. Add the eggs one by one, whisking all the time. The mixture should be nice and smooth.
  3. Get your frying pan, add a little butter and add a dollop of the mixture. You can cook a couple of pancakes at a time as long as your pan is big enough.
  4. Turn the pancakes when one side is golden. When both sides are light brown, you’re done! It should take just a few minutes.
  5. NB - your mixture should make around 25 pancakes. Once fried, they’re fine to freeze.
  6. For the topping, pop the almonds in a pan on the stovetop or roast in the oven for 5-6 minutes at 200C. Once they’ve cooled, chop them roughly.
  7. Cut the strawberries into chunks and decorate your pancake plate with skyr, berries, and almonds.
